Magyi Wet Thar Hin
(Tamarind pork)


  1. Prepare tamarind pulp: Soak tamarind in hot water for a few minutes. Then mash and filter it through a sieve.
  2. Make a paste out of onions, garlic and chillies in a food processor.
  3. Heat oil in a pan. Cook the onion paste for 15-20 minutes to caramelize it.
  4. Add turmeric and shrimp paste and mix well with a wooden spoon.
  5. Add pork and cook over moderate heat until dry. Keep stirring to avoid burning the onions.
  6. Pour in the tamarind liquid and bring to boil.
  7. Reduce the heat, cover and simmer for 45-60 minutes.
  8. Add a little water if gravy is thick. Serve with rice.

  • Tamarind pulp 50 g
  • Hot water 250 ml
  • Quartered large onions 2
  • Crushed garlic 4 cloves
  • Whole dried chillies, soaked in hot water 3
  • Peanut oil 120 ml
  • Ground turmeric ¼ tsp
  • Shrimp paste 1 tbsp
  • Pork, cut into 3cm chunks 700 g
