Crunchy Chicken Apple Salad

Method

  1. In a large bowl, combine the limejuice, vinegar and sugar, stirring until the sugar dissolves.
  2. Add the onions and apples and toss.
  3. Drain, and pat dry the chicken. Add it to the apple mixture and toss.
  4. Add the nuts, mint, basil, salt and pepper.
  5. Toss and serve cold.

Note: Go Low on salt,as excess salt causes water retention
Serves2: 250 cals/serve
Ingredients
  • 300g boneless chicken, steamed, diced or shredded
  • 2 tbsp fresh limejuice
  • ½ tbsp white vinegar
  • 1 tbsp brown sugar
  • 2 spring onions, thinly sliced
  • 1 large apple, diced/sliced
  • 50g roasted peanuts/walnuts, roughly chopped
  • 1 tspfresh mint, chopped finely
  • 1 tbsp chopped
  • Salt and pepper, to taste
